I don't mean how to I change the text underneath it, or beside them. I mean the actual part that SAYS About Me and the actual part that SAYS Television, Movies, Books...

You change it with cascading style sheets (CSS). There are tons of MySpace CSS Editors that'll write the code. Just Google MySpace Profile Editor or MySpace CSS Editor.
